Terroir : Chez Maillard estate, cru Fins Bois, chalky hilltop at 154m of altitude.
50% groies, hard limestone from the Jurassic and 50% groies de champagne, soft limestone from the Cretoceous.
Grape variety : 100% Ugni-blanc, overage age of the vines : 43 years.
Vinification : On site, alcoholic and malolactic fermentation in
thermoregulated stainless steel tanks. Selected yeasts of locol origin.
Distillation : Double distillation on les, in a 25HL Charentais copper still,
Ageing : Ageing in new borrels for 4 to 6 months, then in red and old barrels for
several years. Barrels of 400L, in French ok type Limousin, quality loose grains.
Blend : Exclusive selection of eaux-de-vie in Fins Bois cru, blend of 10 yeors of age minimum.
